Invertase

Invertase is a carbohydrate-digesting enzyme that splits sucrose (common table sugar) into its component parts, glucose and fructose. It is generally derived from a beneficial strain of Saccharomyces cerevisiae and then purified to be used either by itself or as a part of a multi-enzyme formula.

Here are some benefits of Invertase:
  • Natural immune booster: Enzymes found in honey, such as invertase, have been studied for their metabolic activity.
  • Antioxidant support: Invertase has antioxidant properties that can help protect the body from oxidative stress.
  • High catalytic rates: Invertase uniquely combines high catalytic rates, thermal stability, pH stability, and high specificity.
  • Sucrose tolerance ability: Invertase has high sucrose tolerance ability and can be employed in producing high fructose syrup.

A study identified and immobilized an invertase with high specific activity and sucrose tolerance ability of Gongronella sp. w5 for high fructose syrup preparation. Another study showed that the biocatalyst invertase can be used to detect COVID-19-specific antibodies using a commercially available glucometer.

The recommended dosage of invertase can vary based on individual health conditions, age, weight, and other factors. However, for general health purposes, a typical dosage might range between 500 to 1500 units per day. Invertase is generally considered safe when taken in moderation, but as with any supplement, there can be potential side effects. These may include upset stomach, diarrhea, or nausea, particularly if taken in high doses.
